Italian thigh meat selected from the Pesante Padano breed of pig, deboned and bound by hand. The seasoning for curing is prepared using an infusion of over 13 aromatic herbs, spices, and a drop of honey and wine. A process of slow cooking at low-temperature gives a smooth and very well-balanced final texture.
